Chewy and Soft Peanut Butter Cookies

These cookies apparently came from the back of the Crisco container at one time. All I know is they are  delicious and addicting!

Chewy Peanut Butter Cookies

1/2 butter flavored shortening (I love the Crisco sticks!)
3/4 c. creamy peanut butter
1 1/4 c. packed brown sugar
3 Tbsp. milk
1 1/2 Tbsp. Vanilla
1 egg
1 3/4 flour
3/4 tsp. salt
3/4 tsp. baking soda
small bowl of white sugar for rolling.

Combine shortening, peanut butter, brown sugar, milk and vanilla. Beat in the egg.

Combine flour, salt, and baking soda. Add to creamed mixture. Mix until blended.

Roll into heaping teaspoon sized balls (I use a cookie scoop) then roll in white sugar. place on baking sheet 2 inches or so apart. Flatten slightly in a crisscross pattern with a fork.

Bake 10 minutes or until just set and slightly brown. DO NOT OVER BAKE. Cool 2 minutes on baking sheet. Move to racks to cool completely.

Enjoy!
